3 avocados
1 clove garlic, minced
1/2 tsp. salt
1/2 tsp. cumin
- Halve and pit avocados, then scoop out flesh
- Mash with spices until desired consistency (smooth or slightly chunky)
1/2 cup onion, finely chopped
1-2 Roma tomatoes and/or tomatillos, chopped
1 jalapeno pepper, minced (or 1 tsp. harissa or 1/2 tsp. chipotle powder)
1 tsp. dry cilantro (or 2 Tbsp. fresh, finely chopped)
juice from 1 lime
- Fold in remaining ingredients and refrigerate for 30 minutes
