6 cups fresh peaches (2.5 lbs.)
1/4 cup sugar
3 Tbsp. tapioca
2 tsp. lemon juice
1/8 tsp. salt
1 Tbsp. butter, cubed

  • Add peaches to pot of boiling water for 30-60 seconds, then remove to pot of ice water. Skin peaches, slice and remove stones.
  • Toss slices with remaining ingredients. Cover and let rest 30 minutes.
  • Bake at 400F for 45-60 minutes.
