1 cup sugar
6 Tbsp. butter, melted
2 eggs
6 Tbsp. cocoa powder
1 tsp. vanilla extract
1 cup flour
1 tsp. baking powder
pinch salt
1/2 cup semi-sweet chocolate chips
1/3 cup candied ginger, minced
1/2 cup confectioner’s sugar

  • Beat sugar, butter, eggs, cocoa, and vanilla until smooth and creamy.
  • Add flour, baking powder, and salt, and mix for 2 minutes.
  • Stir in chocolate chips and ginger.
  • Cover and refrigerate dough at least 2 hours.
  • Roll dough into 1” balls and coat generously with confectioner’s sugar.
  • Place 1” apart on cookie sheet.
  • Bake at 350F for 10-12 minutes, until tops looked cracked – don’t over bake.
