1 cup all-purpose flour
1 cup bread flour
1.75 tsp. kosher salt
3/4 tsp. baking soda
1/2 cup (1 stick) unsalted butter, melted and cooled for 20 minutes
1/2 cup vegetable oil
1.25 cups dark brown sugar
1 cup white sugar, divided
1 Tbsp. vanilla extract
2 eggs
8 oz. semisweet chocolate, chopped

  • Whisk flours, salt, and baking soda together and set aside
  • Whisk butter, oil, sugars (reserving 1/2 cup of white sugar), and vanilla. Whisk in eggs vigorously until smooth (about 30 seconds)
  • Add dry ingredients and stir until smooth
  • Fold in chocolate, and rest for 1 hour
  • Form into balls, and roll in remaining 1/2 cup of white sugar
  • Bake 7-8 minutes at 375°F, and tap baking sheet to partially deflate the cookies to accentuate cracking.
