1/2 cup sugar
1/4 tsp. salt
6 egg yolks

  • beat together in a heatproof bowl and set aside

2 cups heavy cream
1 cup whole milk
1 1/2 tsp. mint extract
10 oreos, crumbled

  • heat cream and milk over low heat until they reach 170°F
  • pour into egg mixture while mixing, then heat the mixture until it reaches 160°F
  • chill in an ice bath until reaching room temperature
  • strain through a mesh sieve to remove any lumps
  • mix in mint extract and chill for 1 hour
  • process in ice cream maker for 10 minutes, then add oreos
