4 egg yolks
1/2 cup sugar
1 cup milk
1 cup heavy cream
2 tsp. vanilla

  • whisk yolks and sugar until pale yellow
  • heat milk and cream until they reach 180°F
  • slowly pour hot milk mixture into yolk mixture while stirring
  • return mixture to the flame and heat until they reach 165°F
  • remove from heat and add vanilla
  • cover and let cool to room temperature, then chill for 2 hours before processing with ice cream maker
