1 cup cream
2 Tbsp. plus 2 tsp. cocoa

  • whisk together cin a small pan, bring to a boil, then simmer for 30 seconds

4 oz. chocolate chips
1/3 cup cream

  • add chocolate chips to cocoa mixture and stir until melted
  • add cream and stir until combined

2 egg yolks
1 cup milk
1/2 cup sugar
1/4 tsp. salt
1/2 tsp. vanilla

  • beat eggs in a small bowl and set aside
  • heat milk, sugar, and salt in a small pan until steaming
  • pour hot milk mixture into egg yolks in a thin stream while mixing
  • return yolk mixture to the pot and heat until it reaches 170°F
  • remove from heat and add vanilla
  • pour through a mesh strainer into chocolate mixture and mix well
  • place plastic wrap on the surface of the mixture and let cool to room temperature
  • chill mixture, then process in ice cream mixer following mixer instructions
