glaze:

1 1/2 cups powdered sugar
3 1/2 tbsp. milk
2 tsp. vanilla

  • mix milk and vanilla into powdered sugar and stir until smooth

dough:

1 egg
1 cup milk

  • beat egg in small bowl, then mix in milk

2 cups flour
2 tbsp. sugar
4 1/2 tsp. baking powder
1/2 tsp. salt
1/4 cup (1/2 stick) butter

  • mix dry ingredients in mixing bowl
  • stir in egg/milk and mix until a dough forms
  • melt butter and stir into dough

5 cups vegetable oil

  • heat oil to 350°F in deep pot (should have 2” clearance)
  • drop tablespoons of dough into the oil and fry for 2 minutes while turning to ensure even browning
  • you can make them larger or smaller, but larger doughnuts will take longer to cook all the way through
  • remove to paper-towel lined plate and dry
  • dip doughnuts in glaze and let dry on cooling rack
  • serve immediately

4/29/23: first time making these, and they were very good — the first time i’ve made doughnuts at home that were worth the bother. some notes for next time:

  • i used a small ice cream/cookie scoop and the doughnuts wound up being a little larger than i would like (and some of them were misshapen because they dangled from the scoop). so next time i will use a spoon to make slightly smaller doughnuts and scrape them off to prevent stretching.
  • i thought the glaze was a tiny bit too thin, but Wind liked it as-is. i tried double-glazing a few, but the glaze didn’t set as well.
