1 lb. blackberries
1/2 cup sugar
1 tsp. lime zest (about 1/2 lime)
1/4 tsp. kosher salt
1/4 cup water

  • bring to a simmer and cook until berries break down
  • remove to blender and puree
  • strain through fine mesh strainer to remove seeds

blackberry mixture
16 oz. cream
1 tsp. vanilla

  • combine in ice cream maker and process until frozen
