1 cup (227g) butter, softened
1/2 cup (100g) sugar
1/4 tsp. salt
1 1/2 tsp. vanilla
1 egg
2 cups (284g) flour
sugar for sprinkling (optional)

  • beat butter and sugar on medium speed until fluffy, 1-2 minutes
  • add salt, vanilla, and egg and beat until combined
  • reduce speed to low and gradually add flour until combined
  • pipe the dough in 2” circles, or use a cookie press
  • sprinkle with sugar if desired
  • bake at 350°F for 15-17 minutes, until light golden brown
