Asian Fish In A Packet

2 tsp. ginger
3 cloves garlic, minced (or 1/4 tsp. garlic powder)
2 Tbsp. vegetable oil
6 Tbsp. soy sauce
1 Tbsp. sesame oil
- Combine all ingredients and stir.
Fish:
1 Tbsp. canola oil
1 1/2 cups rice, steamed
3 cups bok choy, chopped
3 small tilapia fillets (approx. 1 lb.)
3 scallions, chopped
- Brush 3 sheets of aluminum foil with oil.
- Spread rice on each sheet and top with bok choy and a fillet.
- Top with scallions and spoon sauce over the top.
- Fold up and seal foil packets.
- Bake at 450°F for 25 minutes.
Alternate baking: Prepare in dutch oven or oven-safe pot with tight-fitting lid.
