Sauce:

1/2 cup mayonnaise
1 Tbsp. lime juice
1 tsp. cilantro, chopped
1 dried chipotle, soaked in boiling water
1/4 tsp. salt

  • Combine all ingredients and mix until smooth.

Beer-Battered Cod Fillets (or substitute frozen):

12 cod fillets
1 1/2 cup flour
3 eggs
8 oz. dark beer
2 tsp. dry mustard
1 Tbsp. chili powder
1 Tbsp. salt
1 tsp. sugar

  • Dredge cod fillets in flour
  • Coat with batter and fry in oil until browned.

Assembly:

12 corn tortillas
2 cups cabbage, chopped

  • Spread sauce on tortilla and add fried fillet.
  • Top with cabbage.
