2 cups sushi rice, prepared
2 1/2 cups water
1/4 cup rice vinegar
1 cucumber
1 avocado
4 sticks imitation crab
4 sheets nori

  • Rinse rice, add water and cook in rice cooker.
  • Turn out rice in glass or wooden bowl, mix in rice vinegar, and let cool to room temperature.
  • Peel cucumber and avocado, cut into eighths lengthwise.
  • Halve crab sticks lengthwise.
  • Spread rice evenly over nori.
  • Arrange cucumber, avocado, and crab in a strip at one edge.
  • Roll up nori and press firmly.
  • Cut each roll into eight pieces.
