3 Tbsp. vegetable oil
1/2 lb. potatoes, thinly sliced
1 onion, diced
2 tsp. chopped herbs (marjoram, basil, rosemary or oregano)
1 1/2 cloves garlic, minced
6 large eggs, beaten
3/4 cup grated cheese
salt and pepper to taste

  • Saute onion and potato in oil for about 8 minutes, until tender and golden.
  • Stir in herbs and garlic.
  • Pour in eggs, tilting pan to spread evenly.
  • Sprinkle cheese, salt and pepper. Cover and cook on low heat for 10 minutes, until eggs are set and golden on bottom.
  • Broil for 2 minutes to brown.
