2 Tbsp. peanut oil
2 cloves garlic, minced
1 tsp ginger, grated/ground
1 tsp salt
1 lb. chicken, cubed
1 bell pepper
1/2 onion, diced
2 cloves garlic, minced
2 Tbsp soy sauce
2 Tbsp sugar
2 Tbsp corn starch
1 cup bok choy

  • Combine peanut oil, 2 cloves garlic, ginger and salt in wok and heat until garlic browns.
  • Add chicken and stir-fry until opaque (about 4 min).
  • Add bell pepper, onion, and remaining garlic and cook until bell pepper is tender.
  • Add remaining ingredients and stir-fry until bok choy is wilted.
