4 potatoes, quartered
4 carrots, peeled and thickly sliced
1 onion, quartered
1/2 cup water
1 tsp. thyme
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. pepper
1 boneless pork roast (about 2 lbs.)

  • Spray crock pot with vegetable spray.
  • Put vegetables and water in crock pot.
  • Rub roast with herbs and sear in a hot pan, and add to crock pot.
  • Cover and cook on high for 5-6 hours or low for 10-12 hours, turning once, until meat thermometer reads 160F.
