2100 Cal (8x 263)

6-8 cups water
1 onion, peeled and quartered
6 cloves garlic, peeled and sliced
6 sprigs cilantro (or 1 tsp. dried cilantro)
1 tsp. salt
2-3 lbs. boneless Boston butt pork

  • Add all ingredients except pork to large pot and bring to a boil.
  • Trim fat from pork roast and cut into large cubes (roughly 4”).
  • Add pork to pot and return to boiling.
  • Reduce heat and simmer for 90 minutes.
  • Remove from heat and allow to cool for several hours (can be refrigerated overnight).
  • Drain pork and pull apart.
