1 tbsp. olive oil
1/2 onion, minced
2 cloves garlic, minced
1 can diced tomatoes
1 bell pepper, diced
2 tsp. dried basil
salt and pepper, to taste

  • saute onion, garlic, and peppers in oil for 10 minutes
  • add remaining ingredients and mix well

1 eggplant
4 squash (summer and/or zucchini)
2 tomatoes

  • slice very thinly and arrange in alternating patterns, starting at the edge of the pot and working inwards

2 tbsp. olive oil
1 tsp. thyme
1 tsp. basil
1 clove garlic, minced
1/2 tsp. salt
1/2 tsp. pepper

  • mix together in a small bowl, then spoon over vegetables
  • bake covered at 375F for 40 minutes.
  • uncover and bake another 20 minutes, until vegetables are softened
