2400 Cal (8x 300)

4 oz. spinach, chopped
1 Tbsp. butter
3/4 cup milk
3/4 cup heavy cream
4 eggs
2 egg yolks
1/2 tsp. salt
1/2 tsp. ground black pepper
3 oz. cheddar cheese, grated

  • Melt the butter and saute the spinach for a few minutes until cooked. Set aside.
  • Whisk the eggs, yolks, salt and pepper together in a heatproof bowl.
  • Bring milk and cream almost to a boil then slowly add to egg mixture while mixing continuously.
  • Add spinach and cheese into baked pie shell, then pour in milk/egg mixture.
  • Bake at 350F for about 45 minutes, or until the filling is completely set.
  • Rest for at least 30 minutes before serving.
