15 oz. coconut milk
1 tsp. green curry paste
1/4 cup fresh basil, coarsely chopped
1 Tbsp. brown sugar
1 tsp. salt
2 bell peppers, chopped
1/2 bunch green onions, trimmed and chopped
1 cup bamboo shoots
1 lb. shrimp, peeled and tailed

  • Simmer coconut milk and curry paste for 5 minutes.
  • Add basil, brown sugar, salt, bell peppers and onions, simmer 5 minutes.
  • Add bamboo shoots, simmer 5 minutes.
  • Add shrimp, simmer until done, about 5 minutes.
