1 ½ tsp. cumin
1 ½ tsp. kosher salt
½ tsp. oregano
5 cloves minced garlic
½ cup olive oil
1 lime
½ orange
1 whole chicken

  • Mash spices into a paste in a heat proof bowl
  • Heat oil in saucepan and whisk into spice paste
  • Allow mixture to cool slightly and squeeze in juices
  • Pour over chicken pieces in plastic bag, coating chicken
  • Refrigerate 4 hours or overnight
  • Bake at 375°F about 1 hour, until chicken is 180°F.
