1/2 lb. rice noodles

  • Soak noodles in water 30 to 60 minutes, then drain.

1/3 cup sugar
1/3 cup white vinegar
2 Tbsp. soy sauce
4 tsp. tamarind paste

  • Whisk together in saucepan, bring to a simmer and remove from heat.

2 tsp. vegetable oil
1 lb. chicken breast, thinly sliced

  • Stir fry until chicken is cooked through (5-7 min) and remove from heat.

1 clove garlic
3 eggs
1 Tbsp. sugar
1 tsp. salt
2/3 cup peanuts, ground
1 cup bean sprouts
1/3 cup chives or green onion
1 lime

  • Stir fry garlic in oil.
  • Add eggs and scramble until nearly cooked (2 min).
  • Add chicken breast and noodles, stir to combine.
  • Stir in tamarind sauce, sugar, and salt; cook until noodles are tender (3-5 min).
  • Stir in peanuts and mix thoroughly.
  • Garnish with sprouts, chives, and lime juice.
