Sauce

2 Tbsp. cornstarch
2 Tbsp. water
1/2 cup chicken broth
1/4 cup orange juice
orange zest
2 Tbsp. sugar
2 Tbsp. rice wine vinegar or sherry
2 Tbsp. soy sauce
1 clove garlic, minced
1/4 tsp. ginger
1/4 tsp. red pepper flakes

  • Dissolve cornstarch in water and set aside.
  • Add remaining ingredients to sauce pan and bring to a boil.
  • Add cornstarch mixture and simmer until thickened.

Chicken

1 lb. chicken, cubed
2 eggs, beaten
1 cup cornstarch
1 cup vegetable oil

  • Dip chicken cubes in eggs, and then in cornstarch
  • Fry coated chicken in oil and drain on paper-towel-lined plate.
  • Top with sauce and diced scallions and serve over steamed rice.
