1 large sweet onion cut into small chunks
¼ cup olive oil
¼ bunch chopped cilantro
1 cinnamon stick

1 whole chicken cut into individual pieces

1 Tbsp. ground ginger
1 tsp. black pepper
1 tsp. salt
1 tsp. turmeric
1 tsp. saffron threads crumbled

  • Chop onion and line bottom of tagine.
  • Drizzle olive oil over onions and top with cilantro and chicken.
  • Pierce chicken to allow flavors to seep in.
  • Mix spices in a small dish and sprinkle over chicken.
  • Cook on low heat for about 1 hour until chicken is very tender.
