6 cloves garlic, minced
2 Tbsp. fresh ginger, grated
1/2 bunch fresh cilantro, chopped
2 fresh jalapeños, sliced

  • Grind into paste with mortar and pestle, or food processor.

3 Tbsp. vegetable oil
1 onion, diced
1 Tbsp. cumin
3/4 tsp. salt
1 Tbsp. coriander
1 tsp. chili powder
1 tsp. turmeric
15 oz. chickpeas
1 lb. chicken, cubed
28 oz. tomato purée or finely diced tomatoes
1 tsp. garam masala 1 Tbsp. sugar
2 Tbsp. lime juice

  • Heat large pot over medium heat, then add oil, onion, spices, and chili paste
  • Add chicken and stir fry until browned
  • Add chickpeas and tomatoes, increasing heat until simmering
  • Reduce heat and simmer uncovered for 20 minutes, until thickened
  • Add remaining ingredients and serve over rice
