1 tbsp. canola oil
leftover pork shoulder (~1 lb.), plus shoulder bone

  • cube pork and sear with bone in large pot

1/2 onion
bell or poblano pepper
3 cloves garlic, minced

  • add vegetables and saute until tender

2 qt. chicken stock
1 tbsp. soy sauce
4 eggs
salt to taste

  • add stock and soy sauce, and bring to a simmer
  • add eggs and simmer for 15 minutes, then remove, chill in an ice bath, peel, and set aside
  • continue simmering until pork is very tender (approx. 1-2 hours)

4 scallions
14 oz. ramen noodles (or soba if you can’t find proper ramen noodles)
previously-cooked eggs

  • add and simmer for 4 minutes
  • remove eggs and slice

1 sheet nori, cut into strips (seaweed snacks work here too)
1 tsp. sesame oil

  • add, mix well, and serve
