8 oz. sweet potato noodles

  • Boil for 5 minutes, then drain and rinse under cold water
  • Cut into 6-inch lengths and set aside

4 oz. spinach

  • Add to boiling water for 1 minute, then drain and rinse under cold water
  • Form into ball and squeeze out liquid, then cut in half and set aside

2 Tbsp. oil
1 lb. chicken breast, cubed
2 cloves garlic, minced
½ small onion
1 small carrot, cut into strips
1 scallion, cut into 1-inch lengths
½ Tbsp. sesame oil
4 Tbsp. soy sauce
2½ Tbsp. sugar

  • Heat oil in wok and brown chicken
  • Add vegetables and stir-fry for about 3 minutes
  • Reduce heat, add noodles, spinach, and remaining ingredients, mixing well
