1 pound (2 to 3 medium) potatoes

  • Dice half the potatoes and boil for 8 minutes
  • Drain and mash with milk

  • Grate potatoes, toss with salt and drain

1/3 cup all-purpose flour
1/4 tsp. pepper

  • Mix remaining ingredients with mashed and shredded potatoes
  • Fry in butter or margarine, making pancakes with 1/4 cup of batter
  • Keep warm in a cool oven until ready to serve
