1 lb. pasta
5 Tbsp. butter
5 Tbsp. flour
5 cups milk
1 lb. white cheddar, or a mix of hard cheeses
½ tsp. salt
½ tsp. pepper

  • Boil pasta according to directions, but for 1 minute less than desired tenderness, then drain.
  • Melt butter in a large saucepan, then whisk in flour until combined. Cook for 2-3 minutes until lightly browned and toasty.
  • Whisk in milk, and continue whisking until sauce simmers and thickens slightly.
  • Reduce heat to low, add cheese and spices, and stir until sauce is smooth. Add pasta and stir until combined.
  • Rest 3-5 minutes, then stir and serve.
