1 lb. ground beef
1/2 lb. ground pork
1 onion, finely chopped
1 clove garlic, minced
4 oz. bread crumbs
1 egg
5 Tbsp. milk
salt and pepper

  • Mix beef and pork by hand, working out any lumps.
  • Mix in onion, garlic, bread crumbs, and egg, and work in until smooth.
  • Add milk, salt, and pepper and mix.
  • Shape into (35g/1.25 oz.) balls and chill for 2 hours
  • Bake at 350°F for 30 minutes.

3 Tbsp. butter
3 Tbsp. flour
10 oz. stock
5 oz. cream
2 tsp. soy sauce
1 tsp. mustard

  • Melt butter and stir in flour to make a roux, cooking for 2 minutes.
  • Add remaining ingredients and stir until smooth.
  • Bring to a simmer until thickened.
