wrappers:

500g flour
260ml water

  • mix until combined, then knead into a dough
  • rest for 15 minutes, then knead again until the dough is smooth
  • rest 60 minutes until the dough is soft
  • divide dough into 8 sections
  • take one section and keep the rest covered to prevent drying out
  • roll the section of dough into a rope and cut into 8 pieces
  • press each piece into the palm of your hand, then roll into a thin disk

filling:

1 lb. ground pork
3 cloves garlic, minced
1 egg, beaten
1 Tbsp. finely chopped chives
1 cup chopped greens (baby bok choy, cabbage, etc.)
2 Tbsp. soy sauce
1 1/2 tsp. sesame oil
1 tsp. ground ginger

  • Mix together until thoroughly combined
  • Fill each dumpling wrapper with 1 Tbsp. of filling
  • Wet edge of wrapper with water and crimp to seal

3/4 cup chicken broth
1 Tbsp. soy sauce
1/2 tsp. sherry
1/4 tsp. salt
1/2 tsp. sugar
1/4 tsp. pepper

  • Mix all ingredients and bring to a simmer in a saucepan
  • Simmer dumplings until filling is cooked through, about 10-15 minutes

1/2 cup soy sauce
1 Tbsp. rice vinegar
1 Tbsp. finely chopped chives
1 Tbsp. sesame seeds
1 tsp. hot sauce

  • Mix together in a small bowl and serve as a dipping sauce
