4 chicken breast halves
salt and pepper
2 eggs, beaten
1 cup bread crumbs
1/2 cup grated Parmesan cheese
1 tsp. garlic powder
1 cup olive oil
1 cup tomato sauce
1/2 cup mozzarella, cubed or grated
1/4 cup fresh basil, shredded

  • Place chicken breasts between two pieces of plastic and pound until flattened and 1/2” thick
  • Season with salt and pepper, then dip in eggs
  • Mix bread crumbs, Parmesan, and garlic power. Dip each chicken breast in bread crumb mixture.
  • Fry each breaded chicken breast until golden brown, 2-4 minutes per side.
  • Top each chicken breast with sauce, mozzarella, and basil.
  • Bake at 425°F for 15-20 minutes, until cheese is melted and chicken reaches 165°F.
  • Serve on a bed of pasta.
