2 slices sandwich bread

  • tear into pieces, and grind into crumbs in food processor
  • spread on baking sheet and bake at 300°F for 10 minutes
  • remove from oven and let cool completely on baking sheet

2 lbs. ground pork
1/2 cup bread crumbs from above
1/2 cup cold water
1 Tbsp. salt
1 1/2 tsp. white pepper
1 tsp. fresh sage
1 tsp. onion powder
1/2 tsp. ginger
1/2 tsp. mace
1/2 tsp. nutmeg

  • combine all ingredients and mix well
  • shape into 30g balls and chill for 2 hours
  • bake at 350°F for 30 minutes

2021-02-28: original recipe was good, but a ton of work to grind the pork and a little spicier than it should be (particularly the mace but also the pepper). texture was very soft, which would be great for filling casings, but too soft to be easily workable.
