1 Tbsp. vegetable oil
1 onion, finely chopped

  • saute onion in oil until tender

2 lbs. cumberland sausgage meat
2 eggs
salt and pepper

  • combine sauted onions and all ingredients and mix well

1 batch croissant dough
1 egg, beaten

  • roll out dough to a 20x65cm (8x25”) rectangle and cut into four sections that are approximatly 4x12” (10x30cm)
  • chill for 10 minutes
  • line each rectangle with sausage mixture, and brush the edges of the pastry with egg
  • fold over the top, then roll over so the seam is underneath
  • brush the top of the rolls with egg, then cut into desired lengths
  • bake at 400°F for 20 minutes, until golden brown
