12 eggs
1/2 cup creme fraiche
1/4 onion, finely chopped
2 scallions, thinly sliced
2 cloves garlic, thinly sliced
1/4 cup cilantro, chopped
1/2 tsp. garam masala
1/2 tsp. coriander
1/2 tsp. salt
1/2 tsp. black pepper
1/4 tsp. red pepper flakes 2 Tbsp. ghee or butter
1/4 cup crumbled paneer or feta

  • mix all ingredients except ghee and paneer in a large bowl
  • heat ghee in a 12” oven-proof pan until very hot
  • pour in egg mixture and cook without disturbing for 5 minutes
  • sprinkle with paneer/feta
  • transfer to oven and bake at 350°F for 15-25 minutes, until golden brown
