12/14/23: rice mix variant:

1.5 lbs. chicken breast, cut into large chunks
juice from 1 lime
2 cloves garlic, minced
1 chipotle in adobo, chopped
1 tsp. salt
1 tsp. oregano
1/4 cup cooking sherry

  • mix all ingredients in ziplock bag and marinate for a few hours

2 tbsp. olive oil
1/2 onion, diced
2 cloves garlic

  • saute until tender, about 5 minutes
  • add chicken with marinade and saute until browned, about 5 minutes

2 cups boiling water
1 can diced tomatoes, drained
9 oz. package vigo yellow rice

  • add water and tomatoes and bring to a boil
  • add tomatoes and rice mix and mix well
  • reduce heat and cover, simmering for 20-25 minutes until rice is tender and has soaked up excess moisture

note: i used 2 1/2 cups water and didn’t drain the tomatoes, and it was too much moisture. the recipe as written above may be a little dry, so needs monitoring to make sure there’s enough liquid for the rice
