1 tbsp. butter
3-4 servings tater tots (frozen)

  • butter baking dishes and line bottom with tater tots

1 tbsp. oil
1 onion, diced
1 poblano, seeded and diced

  • saute onion and pepper in oil for 5 minutes, then sprinkle over tater tots

3/4 cup shredded cheese (cheddar/jack or mexican blend)
4-5 slices bacon, cooked and crumbled

  • sprinkle over tater tots

6 eggs
1/4 cup cream
salt and pepper, to taste

  • beat eggs and cream, season with salt and pepper, and pour over tater tots
  • bake @ 350°F for 45 minutes, until egg mixture is set
  • serve with black beans and ranchero sauce
