1 Tbsp. oil
1 lb. pork belly, cubed
4 cloves garlic, minced
1” fresh ginger, peeled and sliced
2 poblano peppers, diced
1 quart chicken stock
1.5 quarts water 1/4 cup mirin
2 Tbsp. soy sauce
4 eggs
ramen noodles
4 scallions
1-2 cups snap peas, trimmed and sliced

  • sear pork belly in oil until pan develops some char
  • add garlic, ginger, and peppers and saute until fragrant
  • add stock, water, mirin, and soy sauce and bring to a boil
  • add eggs and simmer for 15 minutes, then remove to an ice bath and peel
  • simmer for another 30 minutes
  • add scallions and snap peas to soften
  • add eggs and simmer for 5 minutes, then remove and slice
  • add noodles and cook until tender
