3 lbs. pork shoulder
salt and pepper
2 Tbsp. vegetable oil
1 onion, diced
3 cloves garlic, minced
1 1/2 tsp. cumin
1 1/2 tsp. oregano
2 cups chicken stock

  • trim pork shoulder, cut into large cubes, and season with salt and pepper
  • heat oil in large pot and sear pork, then remove to a plate
  • add onion and saute until tender
  • add garlic and saute 1 minute
  • add cumin, oregano, and stock
  • return pork to the pot and cover
  • simmer pork for 2-4 hours

2 cups salsa verde

  • add to pot and simmer for 30-45 minutes
  • shred pork and serve as a stew, or drain and use to fill tacos or burritos
