1/2 cup masa harina
1/2 cup flour
1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. chile powder
1/2 tsp. cumin
1/2 tsp. cilantro
1/2 cup milk
1 egg
1 cup frozen corn kernels
15 oz. can black beans, drained and rinsed
1 poblano pepper, seeded and diced
1/4 onion, diced
1/2 cup canola oil, for frying

  • mix dry ingredients together
  • beat egg with milk and mix into dry ingredients
  • microwave corn and beans for 2 minutes, then drain
  • fold corn, beans, pepper, and onion into batter
  • heat oil in a small frying pan until hot (a small drop of batter should immediately sizzle)
  • drop batter into hot oil 1/4 cup at a time and fry 3-5 minutes per side
  • remove to paper towels to drain
  • serve immediately with salsa and sour cream
