2¼ cups flour
½ cup bread flour
1 tsp. salt

  • Mix together in a large bowl

6 Tbsp. (80g) lard or shortening
4 Tbsp. (60g) butter

  • Mix into flour with pastry blender

½ cup boiling water

  • Pour into flour fixture and mix with spoon, then turn out to silicone mat.
  • Shape into a ball and let rest 5 minutes.
  • Knead if lumpy
  • Roll out quickly, shaping into pie crusts while warm, or the dough will get difficult to work.
