2 lbs. fresh tomatoes

  • Add to boiling water in batches for 45 seconds, then remove to ice bath and remove skins.
  • Blend or crush

1 Tbsp. olive oil
1/2 onion, diced
1/4 bell pepper, diced
1-2 cloves garlic, minced

  • Heat oil in large pot, saute onion and pepper until tender
  • Add garlic and saute for 1 minute
  • Add tomatoes and cook for 15 minutes

6 leaves fresh basil
1/4 tsp. salt
1/4 tsp. black pepper
1/2 tsp. sugar
1/2 tsp. dried parsley
1/4 tsp. red pepper flakes
1 tsp. dried oregano
1 bay leaf
dash Worcestershire sauce

  • Add remaining ingredients and simmer until thickened, about 90 minutes
  • Season to taste.
