honey syrup:

425g honey
120g water

  • heat in a saucepan until honey is fully dissolved
  • refrigerate in an airtight container

bee’s knees:

double jigger (1.5 oz.) gin
single jigger (.75 oz.) honey syrup
juice from 1/2 lemon

  • shake with ice then strain into chilled glass
