1 cup water
1 cup sugar
1 cup mint leaves

  • heat water and sugar over low heat, stirring to dissolve sugar
  • in a separate pot, bring a few cups of water to boiling
  • blanch mint leaves for 10 seconds, then remove to an ice bath for 30 seconds
  • add mint leaves to simple syrup and cover
  • cool to room temperature, then puree and strain to remove larger mint fragments
  • refrigerate in a glass jar
