2 tbsp. rice vinegar
2 tsp. sesame oil
1 tsp. sugar
1 tsp. dijon mustard
1/4 tsp. salt

  • whisk in a large bowl

8 oz. baby bok choy (about 8 heads), thinly sliced
2 shallots, halved and thinly sliced

  • add to sauce and toss to coat
  • chill for 1 hour
