2000 Cal (12x 167)

2 cups flour
1 Tbsp. sugar
1 Tbsp. baking powder
1 tsp. salt
1/2 cup shortening or butter
1 cup milk

  • Mix dry ingredients in large bowl.
  • Add shortening and mix with pastry blender until shortening is broken down into pea-sized lumps.
  • Add milk and mix thoroughly.
  • Drop in 12 spoonfuls onto greased baking sheet.
  • Bake at 400F (230C) for 10-12 min., until golden brown.

To make rolled biscuits:

  • Reduce milk to shy 3/4 cup (170g)
  • Knead dough 6-8 folds
  • Roll out to 1/2” thickness and cut
  • Brush with milk or butter to help browing

2016-09-13 14:46:13: mini batch (2 biscuits):

1/3 cup flour
1/2 tsp. sugar
1/2 tsp. baking powder
pinch salt
1.5 Tbsp. shortening
3 Tbsp. milk

2018-06-28 11:03:50: Partial dairy-free variant:

  • Mix all ingredients except milk as normal
  • Separate 1/2 cup of dough and add 3 Tbsp. almond milk to make 2 dairy-free biscuits
  • Adding 3/4 cup milk to remaining dough, makes 8-10 biscuits

2021-04-21: cheddar biscuit variant:

  • Add 2 tsp. garlic powder and 1/8 tsp. chipotle powder to dry ingredients
  • Add 6 oz. gratd cheddar cheese after blending in shortening
  • Brush with 2 Tbsp. melted butter
