1975 Cal (6x 330)

4 Tbsp. butter
3/4 cup chopped shallots
3 cups chicken stock
1/2 tsp. kosher salt
1/2 tsp. pepper
1 1/2 cups couscous
1/2 cups pine nuts, toasted
1/4 cup currants

  • Saute shallots in butter over medium heat for 3 minutes.
  • Add chicken stock, salt and pepper. Increase heat to high and bring to a boil.
  • Remove from heat and add couscous. Cover and rest for 10 minutes.
  • Add pine nuts and currants, stir and serve.
