1/2 cup milk
2 tsp. dry yeast
1 to 1 1/4 cups flour
1/2 tsp. vanilla
2 egg yolks
1 Tbsp. sugar
1/4 tsp. salt
2 Tbsp. butter, softened
shortening for frying

  • Warm milk to 100°F.  Add to mixing bowl with yeast and 1/2 cup of flour.  Let rest until bubbling.
  • Add another 1/2 cup flour, vanilla, yolks, sugar and salt, and mix on low until incorporated and the dough is smooth.
  • Add butter and mix on medium until incorporated.
  • Add remaining flour and process with dough hook until the dough pulls away from the side of the bowl.
  • Cover the dough and let rise for 30 minutes.
  • Roll out dough and cut with doughnut cutter or cookie cutters.
  • Fry in vegetable oil or shortening at 360°F for 1-2 minutes per side, until golden brown.
  • Remove to plate lined with paper towels to drain, then glaze with powdered sugar glaze.

Glaze

1/2 cup powdered sugar
1 Tbsp. milk

  • Mix and pour over doughnuts.
