5 cups water
1 tsp. kosher salt
1 1/2 coarse-ground grits (not instant)

  • Bring water and salt to a boil and add grits
  • Simmer 15-20 minutes, whisking often, until grits are al dente
  • Remove from heat and let sit 5-10 minutes, until a skin forms
  • Return to low heat for 15-20 minutes, whisking until smooth

2 Tbsp. unsalted butter
1/2 cup heavy cream

  • Whisk in until smooth

6 oz. mozzarella, grated
6 oz. gruyere, grated
6 oz. cheddar, grated

  • Add each cheese a little at a time, whisking to incorporate after each addition
