3/4 cup flour
3/4 cup fine-ground cornmeal
2 tsp. sugar
1 1/2 tsp. baking powder
1 1/2 tsp. salt
1/2 tsp. garlic powder
1/4 tsp. onion powder
1/4 tsp. black pepper

  • Whisk together

4 Tbsp. butter, cubed

  • Blend into coarse meal

1 egg, beaten
1 cup buttermilk

  • Make a well and pour in, then gradually blend until the batter is smooth

1/2 small onion, minced
1 jalapeno, minced

  • Mix gently

6 cups vegetable oil

  • Heat oil to 350°F and drop batter by tablespoonful
  • Fry about 4 minutes, turning often, until golden brown
